Steam Pudding - an all time favorite whether it is on the marae or at home. Best served with custard and cream.

Marina Te Hei (Waipiro) shares her recipe for steam pudding.
Ingredients
- 2 1/2 cups flour
- 1 1/2 cups of sugar
- 1 tsp baking soda
- 250gms butter
- 1 tsp spice
- 3 beaten eggs
- Burnt sugar syrup - 4 tblspn sugar (add more sugar if you prefer darker) don't burn longer than necessary it will taste burnt and bitter. Add 1 cup of water to burnt sugar.
Place flour and sugar into bowl, rub in butter until resembles breadcrumbs, add mix spice and baking soda. Make a well in the middle and add beaten eggs. Lastly add burnt sugar. It should have a runny to cake mix consistency. Steam for 2 hours.

How much Sugar (with flour) into bowl?
Oh did I forget to add the sugar to recipe. 1 1/2 cups added with flour. My apologies.
Kia ora Aunty I make particular one regularly and it's a smash with the whanau they loooooove it ! ! ! how ever do you steam you mixutre in roasting bag or mutton cloth placed in fruit tin as that is how i cook mine but just wondering if there are other variations of cooking this! cheers

i've started selling mine for $10 and they're very popular, I have a recipe that makes 4 puddings at a time, they come out really well i take extra care when rubbing the butter n flour and especially when burning the sugar, castor sugar in the flour mix and ordinary sugar for burning, all the best with yours
